Hellooo! I hope you are having a happy new year so far and if not, well there’s plenty of time for it to improve lol

This post was meant for that weird week between Xmas and new year but I had crazy sleep patterns and serious brain fog, so Netflix and chilling with my carer it was ;o)

Teeny Tiny Fry Up (please ignore arrows etc. on pictures as they are screen shots from my Instagram)

This (brand) ‘bacon’; Linda McCartney’s Lincolshire Sausages; wilted mixed leaves/greens; mushrooms (hiding under the bacon); ASDA Free-from Brown Sauce.

Jalepeno Cheese Burger with a Salad of Beetroot and Mixed Leaf and Cornichons

Aldi Plant Kitchen burger (so thick!); Mexicana Vegan Cheese; Aldi Mixed Leaves with Beetroot; pickled cornichons; olive oil; Helman’s Vegan Mayo.

Assorted Tapas/Mezze Plates

Coconut and cinnamon sticky rice; nachos; fresh salad; falafel; hummus; antipasti – artichoke hearts, sun-dried tomatoes, roasted bell peppers, aubergine; pesto.

BBQ Rib Style Oumph! Rice and Roasted Mediterranean Veg

Oumph! BBQ Pieces, Tilda Coconut Rice (microwavable), Tesco Frozen Med Veg – simple!

‘The Veggie Asian Dish’

This is a hybridisation of my fave Asian dishes. Made with flat rice Vermicelli noodles, fresh Asian stir-fry veg (most supermarkets do a tray/bag), roasted peanuts, chilli oil, sesame oil and soy sauce, with a teeny bit of ginger puree. To make it sweater and more like Chow Mien, add a dash of Oakwood Maple Syrup or East End Tamarind Sauce.

Toona Mayo on Crackers

A tin of jackfruit (with water drained out), vegan mayo, The Cornish Seaweed Company Seaweed Salt, Seaweed Flakes or crushed up sheets of nori by Itsu. Nairns Gluten-free Salt and Pepper Crackers.

‘Chicken’ and Bean Salad

Tofoo Smoked fried in vegetable oil, with a little sesame oil, tin of Napolina Mixed Bean Spicy Salad and Baby Gem lettuce leaves, garlic vegan mayo.

Sunday roast

Quorn Roast, peas and green beans (from frozen), courgettes, mashed spud with Vitalite and salt, Bisto Onion Gravy, M&S Vegan Plant Sausages – I’d already eaten them!

I hope this has given you some ideas for veggie, dairy-free and gluten-free meals, and a practical (really easy) way to make and store everything.

Huge shout-out to my Dad and carer/best mate, without whom I couldn’t physically source some ingredients (can’t be getting home deliveries from five different places, lets be honest). To my carer/best mate for boiling the noodles and rice, grilling the burgers and stir-frying the veg when I’ve run out of energy and strength (and basically need feeding before I get hangry) and for always plating-up so it doesn’t all land on the floor!

    They look deeee-lish! Today I was telling my friend how hard it was to be a vegetarian in the 1980’s. If you were looking for an ingredient in a supermarket you basically got pointed to the cranks section. It’s much easier now to enjoy good vegetarian food and not a veggie lasagne in sight.

      Totally agree! My Bloke was veggie back then and it taught him how to cook basically. I became veggie in 2000 so it was easier but everything I asked for I was referred to the ‘world foods section maybe?’ I was asking for tinned chick peas, pesto, lentils and hummus 🤣
